Thai-Flavored Lobster Salad

The fresh flavors of basil, ginger and lemon unite perfectly in this mayo-free lobster salad.

Ingredients

Vegetable oil

2 tsp

Fresh ginger

1 Tbsp, fresh, minced

Lemon zest

6 Tbsp

Fresh lemon juice

2 Tbsp

Uncooked lobster meat

1 pound(s), steamed or broiled, cut into chunks

Cilantro

¼ cup(s), thinly sliced leaves

Fresh basil

¼ cup(s), thinly sliced

Cucumber

1 medium, thinly sliced

Table salt

⅛ tsp, or to taste

Black pepper

⅛ tsp, or to taste

Boston lettuce

4 piece(s)

Red onion

½ small, sliced

Instructions

Warm oil in a small nonstick skillet over medium heat; add ginger, sauté 1 minute and transfer to a large mixing bowl.

Add zest, lemon juice, lobster, cilantro, basil and cucumber to bowl; mix well and season to taste with salt and pepper. (Note: You can purchase already cooked lobster meat if you prefer.)

Set a lettuce leaf on each of 4 plates. Arrange salad on top and garnish with red onion. Yields about 1 cup lobster salad per serving.
