The fresh flavors of basil, ginger and lemon unite perfectly in this mayo-free lobster salad.

Ingredients

vegetable oil

2 tsp

ginger root

1 Tbsp, fresh, minced

lemon zest

6 Tbsp

fresh lemon juice

2 Tbsp

uncooked lobster meat

1 pound(s), steamed or broiled, cut into chunks

cilantro

¼ cup(s), thinly sliced leaves

basil

¼ cup(s), thinly sliced

cucumber(s)

1 medium, thinly sliced

table salt

tsp, or to taste

black pepper

tsp, or to taste

boston lettuce

4 piece(s)

uncooked red onion(s)

½ small, sliced

Instructions

  1. Warm oil in a small nonstick skillet over medium heat; add ginger, sauté 1 minute and transfer to a large mixing bowl.
  2. Add zest, lemon juice, lobster, cilantro, basil and cucumber to bowl; mix well and season to taste with salt and pepper. (Note: You can purchase already cooked lobster meat if you prefer.)
  3. Set a lettuce leaf on each of 4 plates. Arrange salad on top and garnish with red onion. Yields about 1 cup lobster salad per serving.
