We use precooked chicken, packaged baby greens, and shredded carrots, and fresh lime juice in this salad.
Ingredients

fresh lime juice

3 Tbsp

canola oil

2 tsp

fish sauce

2 tsp

low sodium soy sauce

1½ tsp

sugar

½ tsp

cooked skinless boneless chicken breast(s)

2 cup(s), chopped, shredded

prepared pasta salad mix

5 oz, Asian salad mix

mint leaves

1 cup(s)

shredded carrot(s)

1 cup(s)

uncooked red onion(s)

1 small, thinly sliced

Instructions

  1. Whisk together the lime juice, oil, fish sauce, soy sauce, and sugar in a large bowl. Add the chicken, salad mix, mint, carrots, and onion to the dressing; toss well to coat. Serve at once. Yields 2 cups per serving.
