These meatless patties are far simpler to make than similar recipes you’ll find—no need for breadcrumbs, eggs, or other binding ingredients. Instead, beans, tofu, and seasonings get processed until they form a paste, then whole beans are pulsed in for extra texture. The mixture easily comes together into patties, which are sautéed until crisp on the outside and creamy within. A simple salad completes the meal.

Ingredients

Extra firm tofu

10 oz, drained and crumbled

Taco seasoning mix

1 oz

Canned kidney beans

15½ oz, rinsed, drained, and divided

Canola oil

1 Tbsp

Mixed greens

3 cup(s)

Grape tomatoes

½ cup(s), halved

Light ranch

4 Tbsp, chipotle-variety

Instructions

  1. Place the tofu, taco seasoning, and 1 cup of the beans in a food processor. Process on high speed until the mixture forms a paste that sticks together, 1 to 2 minutes, scraping down the sides of the bowl as needed. Add the remaining beans; pulse just to combine, 4 to 5 times.
  2. Transfer the mixture onto a large piece of parchment or waxed paper; knead lightly if needed to bring the mixture together. Divide the mixture into 4 equal portions, shaping each into a ½-inch-thick patty.
  3. Heat the oil in a large nonstick skillet over medium heat. Add the patties to the pan; cook until browned and crisp, 5 to 6 minutes per side.
  4. Meanwhile, in a medium bowl, toss together the greens, tomatoes, and dressing. Serve the salad with the patties.
  5. Serving size: 2 patties and about 1 ½ cups salad
