Teriyaki-Glazed Sweet Potatoes with Cilantro
¼ cup(s), regular or reduced-sodium
¼ cup(s), fresh, chopped
uncooked sweet potato(es)
2 large, peeled and cut into 2-inch chunks (about 2 pounds)
- Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.
- In a large bowl, whisk together teriyaki sauce and cilantro. Add sweet potatoes and toss to coat.
- Transfer sweet potatoes to prepared baking sheet and bake until fork-tender, about 40 minutes. Yields about 3/4 cup per serving.
