Teriyaki-Glazed Leftover Xmas Ham & Pineapple Skewers

Fresh ginger brightens bottled teriyaki sauce. Add it at the end of cooking so the sauce doesn’t burn off from the heat.
cooked lean ham3 oz, cut into chunks
sweet red pepper(s)½ medium, cut into bite-size pieces
pineapple½ cup(s), cut into bite-size pieces
uncooked scallion(s)1 large, cut into bite-size pieces (plus extra for garnish)
cooking spray2 spray(s)
teriyaki sauce2 tsp
ginger root½ tsp, finely chopped or grated
cooked white rice½ cup(s)
- Skewer ham, pepper, pineapple, and scallion alternately on two or three skewers; lightly coat with cooking spray.
- Combine teriyaki sauce with ginger; set aside.
- Grill skewers on preheated stove-top grill pan (or outdoor grill), turning occasionally, 5 minutes. Brush with teriyaki mixture and serve over rice; garnish with chopped scallions.
- Makes 1 serving.
