Teriyaki-Glazed Leftover Xmas Ham & Pineapple Skewers

Fresh ginger brightens bottled teriyaki sauce. Add it at the end of cooking so the sauce doesn’t burn off from the heat.
Ingredients

cooked lean ham

3 oz, cut into chunks

sweet red pepper(s)

½ medium, cut into bite-size pieces

pineapple

½ cup(s), cut into bite-size pieces

uncooked scallion(s)

1 large, cut into bite-size pieces (plus extra for garnish)

cooking spray

2 spray(s)

teriyaki sauce

2 tsp

ginger root

½ tsp, finely chopped or grated

cooked white rice

½ cup(s)

Instructions

  1. Skewer ham, pepper, pineapple, and scallion alternately on two or three skewers; lightly coat with cooking spray.
  2. Combine teriyaki sauce with ginger; set aside.
  3. Grill skewers on preheated stove-top grill pan (or outdoor grill), turning occasionally, 5 minutes. Brush with teriyaki mixture and serve over rice; garnish with chopped scallions.
  4. Makes 1 serving.
