Water
1¼ cup(s), boiling
Uncooked bulgur
1 cup(s)
Cooked frozen shrimp
1 pound(s), peeled and devined, coarsely chopped
Cucumber
1 small, peeled, seeded, and chopped
Tomato
2 medium, cut into 1⁄2-inch pieces
Scallions
2 medium, chopped
Fresh parsley
½ cup(s), fresh, chopped
Peppermint leaves
¼ cup(s), fresh, chopped
Lemon juice canned or bottled
3 Tbsp
Olive oil
2 tsp
Table salt
½ tsp
Black pepper
¼ tsp
Instructions

Pour the water over the bulgur in a medium bowl. Cover and let stand until the water is absorbed, about 25 minutes. Fluff the bulgur with a fork; transfer to a serving bowl.

Add the remaining ingredients to the bulgur and toss to combine. Yields about 2 cups per serving.
