water

1¼ cup(s), boiling

uncooked bulgur

cooked shrimp

1 pound(s), peeled and devined, coarsely chopped

cucumber(s)

2 medium, cut into 1⁄2-inch pieces

uncooked scallion(s)

2 medium, chopped

fresh parsley

½ cup(s), fresh, chopped

mint leaves

¼ cup(s), fresh, chopped

lemon juice canned or bottled

Instructions

  1. Pour the water over the bulgur in a medium bowl. Cover and let stand until the water is absorbed, about 25 minutes. Fluff the bulgur with a fork; transfer to a serving bowl.
  2. Add the remaining ingredients to the bulgur and toss to combine. Yields about 2 cups per serving.
