Here’s a quick way to satisfy those late afternoon or evening cravings.
Ingredients

banana(s)

1 medium

part-skim ricotta cheese

¼ cup(s)

fat-free cream cheese

1 Tbsp

raisin-cinnamon English muffin(s)

2 item(s), split and toasted

strawberries

4 medium, thinly sliced

Instructions

  1. Combine 1⁄2 the banana, the ricotta, and the cream cheese in a blender. Whirl just until smooth. Thinly slice the remaining banana half.
  2. Spread the banana mixture evenly over the toasted muffins. Top with overlapping slices of banana and strawberries. Yields 1 open-faced sandwich per serivng.
Notes
You can substitute sliced peach, mango, pineapple, or kiwi fruit for the strawberries and use toasted cinnamon-raisin bread in place of the English muffins.If you have leftover banana-cheese mixture, store it in the refrigerator, with plastic wrap directly on the surface of the mixture to prevent it from turning brown. It will keep for a day or two.
