Ingredients

Uncooked sweet potato

4 oz

Sugar

2 Tbsp

Tapioca flour

cup(s)

Cornstarch

4 tsp

Canola oil

4 tsp

Instructions

  1. Peel and chop sweet potatoes into large chunks.
  2. Steam sweet potatoes for 10 mins or until soft.
  3. Mash sweet potatoes with a ricer or fork.
  4. Add sugar, tapioca flour, cornstarch, and mix until it becomes a dough (add more tapioca flour if necessary).
  5. Roll your dough into logs and cut them into small pieces, then roll those pieces into balls.
  6. Fry in oil on low heat for 1 minute, then medium heat for 4 minutes or until golden brown.
  7. Drain and let cool on a wire rack and enjoy!
  8. Serving size: 1/4 of tapioca balls
