Sweet Peanut Butter Popcorn

A little bit of marshmallow creme is melted until smooth and gooey, then tossed with air-popped popcorn to create a light candy-like coating. Powdered peanut butter is then sprinkled on to give this whole-grain snack a sweet, nutty, absolutely delicious flavor. Look for marshmallow creme at a natural-foods store so you that it has fewer (or no) artificial flavors or additives. Air popping the popcorn is easy to do in a paper bag—or, if you don’t have one on hand, you can make a parchment paper pouch (similar to the way you’d make an en papillote parcel).


Ingredients
Yellow popcorn kernels
1 Tbsp, unpopped
Store-bought marshmallow creme (aka fluff)
2 Tbsp
Powdered peanut butter
2 tsp

Cook popcorn in a WW 2-Piece Silicone Microwave Popcorn Popper as directed on package. Or place popcorn in a paper bag, or on a large piece of parchment paper. Fold over edge of the bag to close, or fold edges of parchment to seal in popcorn. Microwave on High until popping stops, 2½ to 3 minutes. Remove popcorn from microwave and open bag or pouch to allow steam to escape.

Spoon marshmallow creme into a medium microwave-safe bowl. Microwave on High until puffy and melted, about 45 seconds. Immediately add popcorn to bowl and toss well to coat. Sprinkle with powdered peanut butter and toss to coat.
