Buy frozen precooked rice to save time, or cook a big batch of rice and freeze it in individual portions.

Uncooked salmon

6 oz, fillet, skinless

Asparagus

6 oz, spears, trimmed

Kosher salt

⅛ tsp

Black pepper

Sweet Thai chili sauce

1 Tbsp

Cooked medium grain brown rice

Preheat the oven to 425°F. Line a sheet pan with foil and spray with olive oil.

Arrange the salmon on one side of the pan and the asparagus on the other side. Coat the asparagus with olive oil spray. Sprinkle the salt and pepper evenly over the salmon and the asparagus. Spread the chili sauce over the top of the salmon. Roast until the asparagus is crisp-tender and the salmon flakes easily with a fork, 10 to 12 minutes. Serve the salmon and asparagus with the rice.
