Our simple sheet pan dinner for one is bound to become a go-to. We rely on the luscious flavor of Thai sweet chili sauce, which offers sweet, tangy, garlicky, and spicy notes all in one convenient ingredient. Buy frozen precooked rice to save time, or cook a big batch of rice and freeze it in individual portions.

Uncooked salmon

6 oz, fillet, skinless

Asparagus

6 oz, spears, trimmed

Kosher salt

Sweet Thai chili sauce

Cooked medium grain brown rice

Instructions

  1. Preheat the oven to 425°F. Line a sheet pan with foil and coat the foil with cooking spray.
  2. Arrange the salmon on one side of the pan and the asparagus on the other side. Coat the asparagus with cooking spray. Sprinkle the salt and pepper evenly over the salmon and the asparagus. Spread the chili sauce over the top of the salmon. Roast until the asparagus is crisp-tender and the salmon flakes easily with a fork, 10 to 12 minutes. Serve the salmon and asparagus with the rice.
