Ingredients

No-salt-added canned drained black beans

31 oz, 2 (15 1/2-ounce) cans

No-salt added canned drained kidney beans

31 oz, 2 (15 1/2-ounce) cans

No-salt-added canned drained pinto beans

31 oz, 2 (15 1/2-ounce) cans

Canned diced tomatoes

30 oz, with chilies 2 (15-ounce) cans

Canned tomato sauce

Onion

1 large, minced

Garlic

1 clove(s), minced

Dried seasoning mix

1¼ oz, chili variety

Frozen corn

14 oz, thawed

Cilantro

½ cup(s), fresh, chopped

Fresh lime juice

1 Tbsp, or to taste

Instructions

  1. Combine onion, garlic, black beans, kidney beans, pinto beans, tomatoes,tomato sauce and chili spice seasoning mix in slow cooker. Cover and cook on Low 4−6 hours or High 2−3 hours.
  2. Add corn and cook 1 hour longer. Stir in lime juice and cilantro just before serving.
  3. Serving size: 1⅓ cups

Notes

This vegetarian chili is a cinch to prepare thanks to supermarket staples. Leftovers make excellent burrito or taco fillings.
