Although recipes for fried onion rings appeared around 1900, they didn’t really take off until fast-food restaurants put them on their menus almost a half century later. The best news is that deep-frying isn’t the only way to cook this treat. A bit of baking powder in our oven-fried recipe ensures that they bake up light and crisp.

All-purpose flour

Whole wheat breadcrumbs

Instructions

Preheat oven to 450°F. Spray 2 large baking sheets with nonstick spray.

Cut onions into 1/2-inch rounds and separate into rings. Set aside 32 of largest rings; reserve remaining onion for another use.

Combine flour and baking powder in large zip-close plastic bag. Whisk together eggs and water in shallow bowl. Mix together bread crumbs and Cajun seasoning in another shallow bowl.

Add onion rings, a few at a time, to flour mixture; shake until coated. Dip rings, one at a time, into egg mixture, then coat with bread crumbs, transferring rings as they are coated to prepared baking sheets. Bake 10 minutes; turn rings over and bake until deep golden and crispy, about 10 minutes longer. Serve warm, sprinkled with flaky salt (if desired).
