Sun-Dried Tomato Bean Spread

This simple spread takes just two steps. First, you soften the sun-dried tomatoes by cooking them over medium heat, then you combine them with the other ingredients in a food processor. Ideal for red peppers, cucumbers or sliced jicama, this low spread is also great on crackers. It's also easy to double the recipe and serve this at your next get-together!

Canned cannellini beans
19 oz, drained and rinsed
Drained sun-dried tomatoes in oil
¼ cup(s)
Water
3 Tbsp
Rosemary
½ tsp, coarsely chopped
Lemon zest
½ tsp, grated
Table salt
¾ tsp
Black pepper
¾ tsp

Soften dried sun-dried tomatoes by submerging them in a small amount of red wine or chicken stock and cooking them over medium heat until soft.

In food processor, combine ingredients until smooth. Makes 1/4 cup per serving.
