Summer Garden Pita Pizza

store-bought pizza sauce2 Tbsp
uncooked bell pepper(s)3 Tbsp, red variety, diced
frozen corn kernels3 Tbsp, thawed or fresh
fresh tomato(es)3 Tbsp, seeded and diced
uncooked red onion(s)2 Tbsp, chopped, diced
basil2 Tbsp, fresh, minced
shredded part-skim mozzarella cheese3 Tbsp
balsamic vinegar2 tsp
- Preheat broiler.
- Place pita on baking sheet. Broil 5 inches from heat until lightly browned, 30–60 seconds on each side.
- Preheat oven to 400°F.
- Spread one side of pita with pizza sauce and place on small baking sheet. Top with pepper, corn, tomato, onion, and basil. Sprinkle with cheese.
- Bake until heated through, 8–10 minutes. Drizzle with balsamic vinegar and serve at once.
