Finish lunch with even more summer produce by having a juicy wedge of watermelon for dessert.

Ingredients

Whole wheat pita

1 large

Store-bought pizza sauce

4 Tbsp

Bell pepper

3 Tbsp, red variety, diced

Frozen corn

3 Tbsp, thawed or fresh

Tomato

3 Tbsp, seeded and diced

Red onion

2 Tbsp, chopped, diced

Basil

2 Tbsp, fresh, minced

Shredded part skim mozzarella cheese

4 Tbsp

Store-bought balsamic glaze

2 tsp

Instructions

  1. Preheat broiler.
  2. Place pita on baking sheet. Broil 5 inches from heat until lightly browned, 30–60 seconds on each side.
  3. Preheat oven to 400°F.
  4. Spread pita with pizza sauce and place on small baking sheet. Top with pepper, corn, tomato, onion, and basil. Sprinkle with cheese.
  5. Bake until heated through, 8–10 minutes. Drizzle with balsamic glaze and serve at once.
  6. Makes 1 serving.
