It might look like forming these dumplings is tricky, but don't worry. Just check out the step-by-step photos for making them on the following pages. The filling is a bit crumbly, but melts when baked into the most delicious chocolate-strawberry filling. Wonton wrappers can be found in the refrigerated section of your market near the tofu. This recipe won’t use up the whole package, so wrap up the remaining wrappers tightly sealed and freeze for up to 6 months.

Dried dates

4 medium, pitted and coarsely chopped

60-69% dark chocolate

3½ oz, chopped (about 1/2 cup)

Freeze-dried strawberries

4 Tbsp, coarsely chopped

Ground cardamom

Instructions

  1. Preheat oven to 400°F. Line 2 baking sheets with parchment paper. In mini chopper or food processor, place dates, chocolate, strawberries, cardamom, and salt and pulse until finely chopped. (Filling will be crumbly.)
  2. Working with 1 wonton wrapper at a time, use your fingertip to dampen all 4 edges with water. Place 11/2 tsp filling in center of wrapper. Bring 2 opposite corners toward center and press together. Bring remaining 2 corners toward center and press together with first 2 corners. (There will be 4 seams meeting in center.) Press each seam together. (See following page for step-by-step photos.) Transfer dumpling to prepared baking sheet. Repeat with remaining wonton wrappers and filling. Lightly coat dumplings with nonstick spray.
  3. Bake until dumplings are lightly browned, 4 to 5 minutes. Dust with powdered sugar. Serve warm or at room temperature.
