Pureed fat-free cottage cheese replaces butter or oil in this baked good, lending plenty of moisture and richness. Feel free to sub in a different fruit you love; raspberries or blueberries would be delicious. If you don’t have a 9-inch square pan, you could use an 11 x 7–inch pan or an 8-inch square pan (the cake will take about 5 minutes longer to cook in the latter).

Preheat the oven to 350°F. Line a 9-inch square baking pan with parchment paper; coat the paper with cooking spray.

In a blender, puree the cottage cheese, sugar, vanilla, salt, and eggs on high speed. Pour the cottage cheese mixture into a medium bowl; stir in the flour until well blended. Fold in the strawberries. Pour the batter into the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Cool in the pan; cut into 16 squares.
