Pureed fat-free cottage cheese replaces butter or oil in this baked good, lending plenty of moisture and richness. Feel free to sub in a different fruit you love; raspberries or blueberries would be delicious. If you don’t have a 9-inch square pan, you could use an 11 x 7–inch pan or an 8-inch square pan (the cake will take about 5 minutes longer to cook in the latter).

Ingredients

Cooking spray

4 spray(s)

Fat free cottage cheese

1 cup(s)

Sugar

cup(s)

Vanilla extract

2 tsp

Table salt

¼ tsp

Egg

2 item(s), large

Self-rising flour

1¼ cup(s)

Strawberries

Instructions

  1. Preheat the oven to 350°F. Line a 9-inch square baking pan with parchment paper; coat the paper with cooking spray.
  2. In a blender, puree the cottage cheese, sugar, vanilla, salt, and eggs on high speed. Pour the cottage cheese mixture into a medium bowl; stir in the flour until well blended.
