These no-bake mini strawberry cheesecake parfait shots are too cute for words and equally as delicious to boot. They are perfect to make in batches for parties with family and friends or to pop in the fridge to save for yourself for future breakfasts or desserts. Better yet, you don’t even have to turn on an oven on a hot summer’s day to whip them up! If you don’t have shot glasses, layer the ingredients in egg cups or small paper cups instead. Additionally, you can top it with any other fresh fruit that’s in-season if strawberries don’t fit your fancy.

Ingredients

Low fat cream cheese

8 oz, softened

Fat free vanilla yogurt

Powdered sugar (confectioner's)

¼ cup(s)

Fat free skim milk

¼ cup(s)

Fresh lemon juice

2 tsp, or to taste

Lemon zest

2 tsp, or to taste (plus extra for garnish)

Fat free whipped topping

Salted butter

1 Tbsp

Graham cracker crumbs

1 cup(s)

Table salt

1 pinch(es)

16 medium, quartered

Instructions

  1. In a large bowl, beat together cream cheese, yogurt, powdered sugar, milk, lemon juice and lemon zest; fold in whipped topping until just combined.
  2. Place butter in a small microwave-safe bowl; microwave until melted. Add graham cracker crumbs and salt; gently mix to combine.
  3. Line up sixteen 2-oz shot glasses on a work surface; layer each one with 1 tablespoon crumb mixture, a heaping 3 tablespoons cheese mixture and 1 quartered strawberry. Serve or refrigerate until ready to use. Yields 1 per serving.

Notes

When strawberries are not in season, top with any other ripe, fresh fruit.
