Stir-fried bok choy with sesame seeds

Toasted sesame seeds add lots of crunch and flavor to this easy Asian side dish. Bok choy is a terrific vegetable with lots of crunch and leafy green ends. It is part of the cabbage family but much milder in flavor with a touch of sweetness. It cooks pretty quickly and comes in all sizes from baby 2-inch heads to much larger more mature sizes. The size does not change the flavor so choose the one that you like the best. Ready in just over 20 minutes, this side is a wonderful accompaniment to steak of any kind or grilled chicken breast. Steam some shrimp and add a touch of steamed rice for a quick Asian-themed one-bowl dinner.


Ingredients
Sesame seeds
2 Tbsp, raw
Canola oil
2 tsp
Fresh ginger
1 Tbsp, grated
Jarred minced garlic
2 tsp
Uncooked bok choy
6 cup(s), shredded, sliced crosswise 1/4-inch to 1/2-inch thick
Kosher salt
¾ tsp
Black pepper
¼ tsp, freshly ground
Instructions

Place a large nonstick skillet over medium-high heat. Add sesame seeds and cook until lightly toasted, shaking pan frequently, about 2 to 3 minutes; transfer seeds to a shallow dish and set aside.

Heat oil in same skillet over medium-low heat. Add ginger and garlic; cook, stirring frequently, until fragrant, about 1 minute.

Add bok choy, salt and pepper; stir-fry over medium-high heat until bok choy is tender, about 5 minutes. Sprinkle in sesame seeds and toss to coat. Transfer to a serving bowl. Yields about 2/3 cup per serving.
