These potatoes have a bright dill flavor thanks to the inclusion of lemon juice. A Greek flavor profile makes them a great side dish to simple roasted lamb chops and a mixed greens with feta cheese and a light vinaigrette. The speedy 20 minute preparation time allows for a more complex accompaniment. The thinner skin of new potatoes makes them ideal for steaming. Halving the potatoes cuts the cook time as well. To change the flavor profile without additional cook time, substitute fresh thyme or rosemary. Pair with sliced roasted chicken and a simple green salad for an irresistible plate full of comfort.

Uncooked potato

Fresh lemon juice

Instructions

  1. Wash and rinse potatoes; slice in half.
  2. Fill a saucepan with water so that it covers about one inch of entire pan, and bring water to a boil. Place potatoes in a steamer basket; set steamer basket in saucepan, making sure it sits above water. Cover saucepan and steam potatoes until completely cooked and tender, about 15 minutes.
  3. Meanwhile, mix together oil, lemon juice and dill.
  4. Place cooked potatoes in a serving bowl and pour lemon juice mixture over potatoes. Toss gently to coat evenly. Yields about 1 cup per serving.
