A quickly made paste of garlic, cumin, salt and pepper adds a concentration of flavor when spread of the sirloin that seared into the beef while it broils. The festive salsa can be made even more colorful by using a variety of tomatoes—heirloom, yellow, orange, plum and many more. Serve this winning combo over a bed of peppery arugula with avocado slices for a filling and delicious dinner salad or, serve alongside some roasted asparagus and and mashed cauliflower for a more traditional meal.
