Steak with tomato and corn salsa

A quickly prepared steak topped with fresh tomato and corn salsa is a guaranteed fiesta! A quickly made paste of garlic, cumin, salt and pepper adds a concentration of flavor when spread of the sirloin that seared into the beef while it broils. The festive salsa can be made even more colorful by using a variety of tomatoes—heirloom, yellow, orange, plum and many more. Serve this winning combo over a bed of peppery arugula with avocado slices for a filling and delicious dinner salad or, serve alongside some roasted asparagus and and mashed cauliflower for a more traditional meal.


Ingredients
Cherry tomatoes
1 cup(s), or grape tomatoes, quartered
Onion
½ medium, red, chopped
Jalapeño pepper
1 medium, minced
Fresh lime juice
1 Tbsp
Cilantro
¼ cup(s), chopped
Cooked corn kernels
½ cup(s)
Table salt
¼ tsp
Garlic
2 clove(s)
Table salt

Ground cumin
½ tsp
Black pepper

Uncooked lean trimmed sirloin beef
1 pound(s), cut 1-inch thick
Instructions

Preheat broiler.

Combine tomatoes, onion, jalapeno, lime juice, cilantro, corn and 1/4 teaspoon salt and set aside.

Smash garlic and salt with side of knife to make a paste; add cumin and pepper. Spread over steak.

Broil until medium-rare, 7 minutes per side. Serve topped with salsa.
