This festive salsa can be made even more colorful by using a variety of tomatoes—heirloom, yellow, orange, plum and many more.

Ingredients

fresh cherry tomato(es)

1 cup(s), or grape tomatoes, quartered

uncooked onion(s)

½ medium, red, chopped

jalapeño pepper(s)

1 medium, minced

fresh lime juice

1 Tbsp

cilantro

¼ cup(s), chopped

cooked corn kernels

½ cup(s)

table salt

¼ tsp

garlic clove(s)

2 medium clove(s)

table salt

½ tsp

ground cumin

½ tsp

black pepper

¼ tsp

uncooked lean trimmed sirloin beef

1 pound(s), cut 1-inch thick

Instructions

  1. Preheat broiler.
  2. Combine tomatoes, onion, jalapeno, lime juice, cilantro, corn and 1/4 teaspoon salt and set aside.
  3. Smash garlic and salt with side of knife to make a paste; add cumin and pepper. Spread over steak.
  4. Broil until medium-rare, 7 minutes per side. Serve topped with salsa.
