Spinach Salad with Goat Cheese, Grapes & Honey Mustard Dressing

This salad pairs the sweetness of grapes with tart, creamy goat cheese. It makes a delicious starter for a casual dinner party, or a great take-to-work lunch. Just pack the dressing separately and toss it right before eating so the spinach doesn't wilt. Make the salad heartier by topping it with grilled chicken, shrimp, or salmon. Roasted, seasoned chickpeas would also be tasty. When cherries are in season, swap pitted cherries for grapes. And if you like a leafy green with more bite, try peppery arugula instead of more mild spinach.

Instructions

To make dressing, in a large bowl, whisk together oil, water, mustard, vinegar, salt, and pepper.

Add spinach, grapes, and onion to bowl; toss to mix and coat.

Place about 2 1/4 c salad on each of 4 salad plates; sprinkle each with 1 Tbsp almonds and 1 Tbsp cheese.
