Pine nuts and raisins are a winning combination that complement each other so well in this dish. Though any dark leafy green will work here, we chose spinach because it cooks so quickly. Plumping the raisins is key to getting the most sweetness and best texture for the dish. Toast your pine nuts lightly for added depth of flavor. Serve this side dish with roasted pork loin or chicken. Salmon fillets also plate well with this side and, for a dinner party would be perfect as the raisins sit like jewels in the deep green of the spinach making for a beautiful presentation.

Raisins

Hot water

1 Tbsp

Olive oil

1 tsp

Garlic

1 clove(s), minced

Spinach

5 oz

Pine nuts (unsalted, raw or dry roasted, no sugar added)

1 Tbsp, toasted

Table salt

¼ tsp

Black pepper

¼ tsp

Instructions

In a small microwavable bowl, plump raisins with hot water on high heat for 30 seconds.

In a large nonstick skillet over medium-high heat, warm oil; add garlic. Cook until fragrant, about 1 minute. Add spinach and stir occasionally until wilted, about 2 to 3 minutes.

Toss with raisins, nuts, salt and pepper. Serve immediately.
