If you have a panini press, great! If you don't, no worries since a ridged grill pan works so well. To add more spicy flavor to the sandwiches, use peppery baby arugula instead of spinach.

Ingredients

Olive oil cooking spray

4 spray(s)

Reduced calorie mayonnaise

2 Tbsp

Light whole grain bread

4 slice(s)

Reduced fat cheddar cheese

6 Tbsp

Apple

1 small, cut into 8 very thin slices

Deli sliced turkey breast

6 oz

Baby spinach

½ cup(s), lightly packed

Instructions

  1. Spread 1/2 tbsp mayonnaise on one side of each slice of bread. Top 2 bread slices evenly with cheese, apple, turkey, and spinach. Top with the remaining 2 bread slices, mayonnaise-side down. Lightly coat the sandwiches with cooking spray.
  2. Coat a panini press with cooking spray and preheat it (or coat a ridged grill pan with cooking spray and set it over medium heat). Place the sandwiches on the press and close the lid (or place them on the grill pan and cover with a heavy skillet, flipping once half way through cooking). Cook until the sandwiches are browned and the cheese is melted, about 5 minutes. Cut each sandwich in half.
  3. Serving size: 1 sandwich
