Turkey, Apple, and Spinach Panini
Reduced calorie mayonnaise
Mixed grain bread
4 oz, 4 (1-ounce) slices
1 medium, cut into 8 very thin slices
Cooked turkey breast without skin
6 oz, thinly sliced (or skinless smoked turkey breast)
Fresh baby spinach
½ cup(s), lightly packed
Reduced-fat cheddar cheese
2 oz, 2 (1-ounce) slices
Olive oil cooking spray
- Spread 1/2 tablespoon mayonnaise on one side of each slice of bread. Top 2 bread slices evenly with apple, turkey, spinach, and Cheddar. Top with remaining 2 bread slices mayonnaise side down. Lightly spray sandwiches with olive oil nonstick spray.
- Spray large ridged grill pan with nonstick spray and set over medium-high heat. Place sandwiches in grill pan and top with another heavy skillet to weight them. Cook until cheese is melted and bread is golden brown and crispy, 2–3 minutes on each side. Cut each sandwich in half.
