Try these simple four-ingredient fries with grilled turkey burgers and a cool mango salsa. The mango will play well against the zesty cajun seasoned fries. The sweet potatoes are a perfect foil to the spice, but white potatoes can also work well. Try on your breakfast plate with poached eggs and some fresh arugula for a little zing in the morning. With only five minutes of active prep, you can have these warm and spicy potatoes any time of day. Cut the potatoes into cubes and make the base of an easy lunch sweet potato bowl topped with quinoa, steamed broccoli and a spritz of fresh lime juice.

Ingredients

Uncooked sweet potato

2 large, (about 1 3⁄4 pounds), peeled and cut into 1⁄4-inch-thick wedges

Chili powder

1 Tbsp

Cajun seasoning

Instructions

  1. Preheat the oven to 400°F. Spray a large baking sheet with nonstick spray.
  2. Combine the potatoes, chili powder, Cajun seasoning, and oil in a large bowl. Spread the potatoes in one layer on the baking sheet. Bake until tender and golden, 30–40 minutes. Yields generous 1⁄2 cup per serving.
