We took your budget fave, packaged ramen, and zhuzhed it up, WW-style with extra veg and extra flavor. While the ramen noodles take center stage, it's really the furikake that shines here, A rice seasoning made of toasted seaweed, sesame seeds, and seasonings like powdered wasabi, salt, or a hint of sugar, it adds so much flavor with just a few shakes. While it used to be tough to find furikake, many large supermarkets carry it now. Look for it wherever the Japanese pantry ingredients are displayed.

Sriracha chili sauce

2 tsp, divided

Uncooked zucchini

2 cup(s), sliced, spiralized

Furikake (Japanese seasoning)

Instructions

  1. In a medium bowl, whisk the eggs, ramen seasoning packets, and 1 tsp sriracha.
  2. To a deep skillet, add the ramen noodles and enough water to just cover noodles. Cover and bring to a boil on high heat. Cook noodles until they just start to loosen. Reserve 1/2 cup cooking water. Drain noodles and return to skillet. Reduce heat to medium.
  3. Stir in the egg mixture. Cook 1 to 2 minutes, until noodles are al dente and eggs are creamy, stirring constantly. Add the zucchini. Remove from heat. Toss to combine. Divide between 2 bowls. Garnish with the scallions and furikake. Serve immediately with remaining 1 tsp sriracha.
