Spicy Potato Sticks

It’s hard to believe these crisp oven-baked “fries” are totally fat-free. Omit the pepper if you’re using hot chili powder.
uncooked potato(es)2 large, baking variety, scrubbed and cut into thin strips
egg white(s)2 large, lightly beaten
ground cumin¾ tsp
table salt½ tsp
chili powder½ tsp
black pepper¼ tsp, freshly ground (optional)
- Preheat the oven to 425°F. Spray a large nonstick baking sheet with canola oil nonstick spray. Combine all of the ingredients in a large bowl and toss to coat. Transfer to the baking sheet and arrange in a single layer. Bake until the potatoes are barely tender, about 15 minutes. Increase the oven temperature to broil and broil 5 inches from the heat until crispy, about 10 minutes longer. Yield about 1 cup per serving.
