Ingredients

Cooking spray

Cajun seasoning

Egg whites

1 large, beaten

Uncooked rainbow trout

1 pound(s), or other trout (four 4 oz fillets)

Spinach

10 oz, steamed

Instructions

  1. Preheat the oven to 400ºF. Coat a baking sheet with cooking spray.
  2. In a large, resealable plastic bag, combine the oats, pecans, and seasoning; seal and shake well.
  3. In a shallow bowl, mix the milk and egg white. Dip the fillets into the egg white mixture. Then place them in the bag with the topping mixture and shake until well coated.
  4. Place the fillets on the prepared baking sheet and bake until the fish is cooked through and the coating is golden, about 10 minutes. Serve each fillet with 1/4 of spinach.
  5. Serving size: 1 trout fillet and 1/4 of the spinach
