Molasses cookies are some of the oldest around, typically seen during Christmas holidays because the contain so many of the familiar flavors of the holiday. Ginger, nutmeg, cloves and cinnamon flavor the simple dough richly sweetened with molasses. Though blackstrap molasses has come into vogue in recent years, the unsulphured light variety is best in this recipe. The simple cookies crackle or split while they spread into cookies, giving them the fun name. Ready in just 45 minutes, these cookies are great for a crowd or as a nice gift for hosts and friends. Let the kids help form the balls and watch them bake for a new tradition the whole family will love. For easy cleanup, line baking sheets with parchment paper.

All-purpose flour

Ground cinnamon

Ground ginger

Preheat oven to 350°F.

Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking soda and next five ingredients in a medium bowl.

Beat butter with a mixer at medium speed until creamy; gradually add 1 cup brown sugar, beating well. Add egg and molasses; beat well. Add flour mixture; beat until smooth. (Dough will be slightly crumbly.)

Shape dough into 1-inch balls. Roll balls in 21⁄2 tablespoons sugar. Place balls 11⁄2 inches apart on baking sheets coated with cooking spray. Bake at 350°F for 8 minutes. Cool 2 minutes on pans. Remove from pans; cool completely on wire racks. Yield: 38 cookies (serving size: 1 cookie).
