With curry powder, a little goes a long way. This brightly colored dip is deeply flavored thanks to the technique of toasting the curry powder. Heating the powder carefully in the skillet allows its flavors to bloom and adds a toasty quality to the spice. You can skip the step but the flavor will not be as compelling. The combination of mayonnaise, sour cream and ketchup add a unique creamy sweetness with a tart note fro the sour cream. Hot pepper sauce amplifies some of the curry powder's natural spiciness. Serve with fresh crudite, especially carrots, cucumbers and celery or heat some naan bread and cut into strips for dipping. Great for dinner parties or game day celebrations, this dip is easy to make-ahead or on the day you are serving and comes together in just under 10 minutes.
