Cooking for one gets a no-cook makeover with this delicious Greek-inspired vegetarian wrap sandwich. Ready in a snap, a few bowls and a fork are all you need to create something you are excited to eat. Fresh hummus, made by you, is the star, as chickpeas, tahini, lemon and spices are mashed to a paste. The minty-fresh yogurt sauce is quick to prepare and brings a bright note against the rich chickpea blend. Eggs make the wrap a great hunger buster for long work days or mid-morning eats and spinach brings the veggies into play. Spice it up by swapping arugula for the spinach. Kids may also enjoy the simple flavors when this wrap makes it into their lunchbox.

Ingredients

Canned chickpeas

½ cup(s), cooked

Flatbread

Tahini

2 tsp

Lemon

½ item(s), medium, juiced

Garlic

½ clove(s), minced

Crushed red pepper flakes

Ground cumin

Plain fat free Greek yogurt

Fresh mint leaves

Hard boiled egg

Instructions

  1. In a small bowl, mash chickpeas with a fork. Mix in tahini, lemon juice, garlic, pepper flakes, cumin, and pepper.
  2. In another small bowl, combine yogurt, mint, and parsley.
  3. Assemble wrap by spreading chickpea mixture onto flatbread. Then layer on egg slices and baby spinach. Top with yogurt sauce. Roll up flatbread beginning at rounded end, and slice in half.
