Looking for a family-friendly dessert that is super comforting? This baked apple has all the feels you want. A nice flavor twist, these 35-minute apples are filled with a cinnamon-ginger mixture. Granny Smith make the best option with their tart flavor and firm texture. Gala apples are good as well for a sweeter note. Other varieties like red or golden delicious might get too tender while they bake. Pudding mix makes a quick and delicious homemade vanilla cream sauce, cooling the palate against the warm apple. Pears work well in this application as well, choose them a little under ripe to maintain their texture.

Ingredients

Apple

4 medium, cored*

Ground cinnamon

1 tsp

Ground ginger

½ tsp

Splenda No Calorie sweetener packets

¼ cup(s)

Water

¼ cup(s)

Fresh lemon juice

2 Tbsp

Fat-free sugar-free instant vanilla pudding mix

¼ oz, about 2 Tbsp

Fat free skim milk

¾ cup(s)

Instructions

  1. Preheat oven to 350°F. Using a vegetable peeler, peel a 1/2-inch horizontal strip around apples to help release juices during baking. Place apples in a 9 X 9-inch baking dish.
  2. In a small bowl, combine cinnamon, ginger and Splenda. Place 1 tablespoon of cinnamon mixture in cored-out center of each apple; sprinkle remaining cinnamon mixture over apples. Combine water and lemon juice in a cup; pour liquid around apples.
  3. Bake until apples are soft when pierced with a knife, about 15 to 20 minutes; remove from oven and let cool.
  4. Pour pudding mix into a medium bowl; whisk in milk to make a fairly thin sauce. Place one apple on a plate and drizzle with sauce.
  5. Serving size: 1 apple and about 1/4 cup sauce

Notes

*Use Granny Smith apples for a tart flavor and Gala for a sweeter flavor.
