In a 4-cup measuring cup or small pitcher, whisk together the kombucha and apple pie spice; stir in the ginger beer. Fill each of 2 tall glasses or mason jars with 1 ½ cups ice; divide the kombucha mixture evenly between glasses. Garnish with the apple slices.
