This combination of lemon green beans and spice-rubbed pork is wonderful for a busy weeknight meal and ready in under 20 minutes! The simple rub includes a little bit of sugar which offsets the earthier flavors and caramelizes on the pork while it broils. Make a larger batch, minus the Worcestershire sauce, to use on chicken, or fish for another great meal. Grill your pork chops if the weather is nice, either way, the rub helps seal the pork, allowing the final product a more juicy texture. Serve this as a small complete meal or add some tomato slices for a summery dish. Cold outside? add some steamed rice or roasted sweet potato cubes for a heartier meal.

Ingredients

Chili powder

1½ Tbsp

Unpacked brown sugar

1 Tbsp

Ground cumin

2 tsp

Garlic powder

1 tsp

Worcestershire sauce

2 Tbsp

Uncooked lean boneless pork chop

20 oz, four 1/2-inch thick chops

Uncooked green snap beans

1 pound(s), steamed

Fresh lemon juice

½ tsp

Instructions

  1. Preheat broiler and coat broiler pan with cooking spray.
  2. In a small bowl, combine chili powder, sugar, cumin and garlic powder. Add Worcestershire sauce and stir until paste forms.
  3. Rub paste onto both sides of each pork chop, place on prepared pan and broil 4 minutes on each side until inside is no longer pink.
  4. Serve with string beans drizzled with fresh lemon juice.
