The zing of the lemon tempers the smoky trout so neither overpower the dish. If you like a briny hit, try adding some capers at the end. If you prefer smoked salmon, use it in place of the trout for an easy variation. The simple combination of vegetables, pasta and citrus sauce has endless possibilities so fiddling around with the combinations is encouraged!

Ingredients

Uncooked whole wheat spaghetti

½ pound(s)

Asparagus

1 pound(s), trimmed and cut into 2-inch lengths

Frozen green peas

1 cup(s), petite variety

Smoked trout

½ pound(s), skinned and flaked

Extra virgin olive oil

4 tsp

Lemon zest

2 tsp, finely grated

Fresh lemon juice

3 Tbsp

Table salt

¼ tsp

Black pepper

¼ tsp

Instructions

  1. Cook pasta according to package directions, adding asparagus and peas during last 2 minutes of cooking time. Drain and return to pot. Add trout, oil, lemon zest and juice, salt, and pepper, tossing until mixed.
