Lunch or dinner is ready in a flash with these Tex-Mex turkey sandwiches, ready in just 11 minutes. Our zesty mayo made by combining mayonnaise, lime, cilantro, cumin and red pepper turns this ordinary turkey sandwich into something spectacular. Smoked turkey adds a lot of flavor and pairs well with the bright flavor of the mayo. Serve these up with some mixed fruit for a wonderful lunch or pair with a quick green salad for a light dinner. Add some fresh bell pepper to your sandwiches for added crunch and more veggies. Make a double batch of the cilantro-lime mayo, thin it with some buttermilk and use as a wonderful salad dressing.

Ingredients

Reduced calorie mayonnaise

Instructions

  1. Combine mayonnaise, cilantro, lime zest and juice, cumin, salt and pepper together in a small bowl.
  2. Spread 1 tablespoon of the mayonnaise mixture on each of 4 slices of bread. Layer each with 2 ounces of turkey, 2 lettuce leaves and a few tomato slices. Cover with remaining bread slices and serve.
