Spice up your mornings with this delicious Mexican-inspired egg recipe. Simple to prepare and ready in just under 20 minutes, these ordinary eggs are elevated with a dash of chili powder, creamy cheese, a warm tortilla and some zesty salsa. Easy for one, this recipe can be multiplied to serve as many as you like. Try it on a busy weekday or make is as the star of a weekend brunch buffet. Instructions

  1. Spray a medium nonstick skillet with nonstick spray and set over medium heat. Add the scallions and cook, stirring frequently, just until softened, about 2 minutes.
  2. Whisk together the egg, egg whites, and chili powder in a medium bowl. Pour the mixture into the skillet and sprinkle with the cheddar. Cook, stirring, until the eggs are set and the cheese is melted, about 2 minutes.
  3. Spoon the eggs on the tortilla and top with the salsa. Yields 1 filled tortilla per serving.
