Smoked Turkey & Mango Quesadilla by Eatwell Exchange

These easy and delicious quesadillas combine sweet and heat with a one-two punch of mango and chili flakes. This recipe was developed by registered dietitians (and best friends!) Ashley Carter and Jasmine Westbrooks, who founded EatWell Exchange, which won the 2021 WW Wellness Impact Award. Eatwell Exchange works to decrease health disparities in low-socioeconomic communities while keeping culturally relevant foods on the table.

Cooking spray

Whole-wheat tortilla
4 tortilla(s), medium
Reduced fat shredded Monterey Jack cheese
1 cup(s)
Mango
½ medium, finely chopped
Scallions
1 medium, finely chopped
Bell pepper
1 item(s), medium, finely chopped
Deli sliced smoked turkey breast
3 oz, chopped
Crushed red pepper flakes
½ tsp
Lime
1 item(s), halved and divided

Instructions

Place tortillas on a work surface and top each with 1/4 cup of cheese. Top each tortilla with a quarter of the mango, scallion, bell pepper, turkey, and red pepper flakes. Squeeze juice from one lime half over the filling. Fold each tortilla in half to close.

Coat a large nonstick skillet with cooking spray and heat over medium heat.

Add a quesadilla to the skillet. Cook until golden brown on both sides, about 2 to 3 minutes per side. Repeat cooking with remaining quesadillas, adding more cooking spray as needed. Cut quesadillas into wedges and serve warm with salsa and remaining lime half cut into wedges.
