Cooked turkey breast with skin
6 oz, smoked variety, diced
6 medium, shredded (about 3 cups)
8 cup(s), shredded
¼ cup(s), unsalted variety
- To make the dressing, whisk together the mayonnaise, lemon zest and juice, salt, and pepper in a large bowl.
- Add the turkey, carrots, and raisins to the dressing; toss to coat.
- Divide the salad greens evenly among 4 plates. Top with the turkey mixture and sprinkle evenly with the peanuts. Yields about 3 cups per serving.
