Smoked Salmon Matzo Pizza

Here’s a Passover-spin on bagels and lox.
part-skim ricotta cheese3 ½ Tbsp
low fat cream cheese1 Tbsp
smoked salmon2 oz, thinly sliced
dill1 Tbsp, chopped
sea salt1 pinch
black pepper1 pinch
- Preheat oven to 400°F.
- Combine ricotta and cream cheese in a cup; spread over matzo. Bake on a foil-lined baking sheet until cheese is hot and edges of matzo brown slightly, about 5 minutes.
- Top with smoked salmon; sprinkle with dill and a pinch each salt and pepper.
- Makes 1 serving.
