Ingredients

Olive oil

Baby spinach

2 large egg(s)

1% low fat cottage cheese

Hot sauce

2 tsp, plus more for garnish

Chives

1 Tbsp, chopped

Smoked salmon, lox

2 oz, chopped

Low fat cream cheese

1 Tbsp

Avocado

¼ item(s), sliced or chopped

Everything bagel seasoning blend

½ tsp, or to taste

Instructions

Heat a medium skillet over medium heat. Add oil, spinach, salt, and pepper to skillet and cook, stirring often, until spinach cooks down, 2 to 3 minutes.

Combine eggs and cottage cheese in a blender and blend until smooth. Pour egg mixture into a bowl and mix in hot sauce and chives. Add the egg mixture to the skillet with the spinach and add the smoked salmon and cream cheese, and scramble until the eggs are fully cooked.

Serve topped with the avocado, everything bagel seasoning, and an optional drizzle of hot sauce.
