Smoked chicken adds amazing flavor, elevating chicken salad to something a bit special. The orange juice in the light dressing adds a subtle sweetness. There's a lot of jalapeño peppers in the mix, but because their heat can vary so, you might want to check how spicy the ones you got are before adding to the salad. Serve the salad spooned into lettuce cups or as a dip with carrots.

Ingredients

Orange juice

Light mayonnaise

cup(s), (preferably Duke’s Light Mayonnaise)

Apple cider vinegar

Mustard

1 tsp, powder

Smoked paprika

1 tsp

Kosher salt

¼ tsp, or more to taste

Black pepper

¼ tsp, coarsely ground, or more to taste

Cooked shredded chicken breast

4 cup(s), smoked white chicken

Celery

½ cup(s), chopped, chopped celery

Uncooked onion

¼ cup(s), chopped, white, chopped

Scallions

¼ cup(s), chopped, chopped

Pickled jalapeno peppers

¼ cup(s), chopped, chopped

Instructions

  1. In large bowl, whisk orange juice, mayonnaise, vinegar, mustard powder, smoked paprika, 1⁄4 tsp salt, and 1⁄4 tsp black pepper. Fold in chicken, celery, onion, scallions, and jalapeño. Cover and refrigerate until cold, about 2 hours, or for up to 2 days. Season to taste with salt and black pepper.
