This regional classic from the Lowcountry areas of Charleston and Savannah is originally from India. Featuring curry, raisins and a base of rice, it is bright in both color and flavor. Using a slow-cooker to prepare the chicken mixture reduces the traditional cooking time dramatically. With only 20 minutes of prep time and 5 hours in the crockpot, putting this dish on auto-pilot for a weekend dinner is simple. For weeknight meals, prepare your mixture in the dish of your crockpot the night before and pop home during lunch to set it to cook. Although this one-dish meal is fully complete, a green salad can add a crunchy and cool side dish.

Ingredients

Dried shiitake mushroom

2 cup(s), sliced, sliced

Onion

Celery

½ cup(s), chopped, chopped

Garlic

1 clove(s), minced

Uncooked skinless boneless chicken thigh

1 pound(s), cut into bite-size pieces

All-purpose flour

1 Tbsp

Fat free chicken broth

Curry powder

Canned crushed tomatoes

Instructions

  1. Coat a large skillet with cooking spray. Add mushrooms, onion, celery and garlic and sauté until vegetables are tender, about 5 minutes. Place vegetables in slow cooker; add chicken.
  2. In a cup, stir together flour and chicken broth until smooth. Add to slow cooker. Add curry powder, salt, pepper, paprika, crushed tomatoes and raisins, and stir in.
  3. Cover and cook on low for 5 hours. To serve, spoon 1/2 cup rice onto each of 4 plates. Top each with chicken and sauce and serve. Yields 2 1/2 cups chicken mixture and 1/2 cup rice per serving.
