Chicken soup for the soul… and the skinny jeans. Chock full of zesty lemon, dill, grilled chicken breast, veggies, and Skinny Pasta noodles, you’ll want another bowl.
Ingredients

olive oil

1 tsp

uncooked carrot(s)

¼ cup(s), chopped

uncooked celery

¼ cup(s), chopped

uncooked onion(s)

1 cup(s), chopped

garlic clove(s)

1 medium clove(s), minced

fat free chicken broth

2 cup(s)

cooked skinless boneless chicken breast(s)

1 cup(s), chopped, diced

Skinny Pasta Konjac noodles, noodle shape (WW endorsed)

1 bag(s), rinsed and drained

Badia Lemon Juice

1 tsp

dill

1 tsp, chopped

fresh parsley

1 tsp, chopped

Instructions

  1. Heat olive oil over medium heat in a medium sized saucepan.
  2. Add carrot, celery, and onion, and cook for 5-7 minutes, stirring frequently, until they soften.
  3. Add garlic and cook 1 minute. Add broth, chicken, and Skinny Noodles and cook for 3-5 minutes to heat through.
  4. Stir in lemon juice, dill, and parsley and serve.

Yields 3 cups – 2, 1 ½ cup servings
