Three ingredients give abundant Mexican flavor in these easy pizzas. Ready in only 7 minutes, you can top these delightful little broiled tortillas with simple staples like salsa, green onion, shredded lettuce or chopped tomatoes for a heartier dish. Make these as a quick-and-tasty after school snack when hungry kids are looking the nosh or make a fun dinner out of these individual pizzas with bowls of topping options for family to make their own combinations. To make these into a quick party appetizer, cut each tortilla into 4 wedges, top and broil, then serve with some tomato salsa as a dip.

Ingredients

Corn tortilla

4 tortilla(s), medium

Pepper Jack cheese

3 oz, coaresly shredded (about 3/4 cup)

Cilantro

¼ cup(s), packed leaves, chopped

Instructions

  1. Preheat the broiler. Place the tortillas on a baking sheet. Broil 4–5 inches from the heat until golden, 30–60 seconds on each side.
  2. Toss the cheese with the cilantro in a bowl. Sprinkle the cheese mixture evenly over the tortillas. Broil 4–5 inches from the heat until the cheese just begins to melt, 20–40 seconds.
  3. Serving size: 1 pizza
