Three ingredients give abundant Mexican flavor in these easy pizzas.
Ingredients

corn tortilla(s)

4 item(s), 6 inches

pepper jack cheese

3 oz, coaresly shredded (about 3/4 cup)

cilantro

¼ cup(s), packed leaves, chopped

Instructions

  1. Preheat the broiler. Place the tortillas on a baking sheet. Broil 4–5 inches from the heat until golden, 30–60 seconds on each side.
  2. Toss the cheese with the cilantro in a bowl. Sprinkle the cheese mixture evenly over the tortillas. Broil 4–5 inches from the heat until the cheese just begins to melt, 20–40 seconds. Yields 1 pizza per serving.
Notes
Serve them with no-POINT, toppers, such as salsa, shredded lettuce, chopped tomatoes, and thinly sliced scallions. Or judiciously add light sour cream—1 1/2 tablespoons per pizza—for an extra 1/2 POINT.For a mock quesadilla, simply fold each finished tortilla in half.
