This rich and creamy buttermilk ranch dip comes together in a quick 20 minutes. Perfect for a lunchbox treat with some dipping vegetables or for a quick party appetizer, you cannot beat the bright flavors of fresh herbs mimicking traditional ranch dressing, but better! Silken tofu thickens the dip and adds volume beautifully. Put a bowl of this dip out on a Saturday with some carrot and celery sticks to let family snack through the lazy afternoon.

Ingredients

Lite silken tofu

½ pound(s), drained

1% low fat buttermilk

cup(s)

Fat free mayonnaise

¼ cup(s)

Chives

2 Tbsp, chopped fresh

Dill

2 Tbsp, chopped fresh

Fresh parsley

2 Tbsp, chopped flat-leaf

Cider vinegar

1½ Tbsp

Garlic

1 clove(s), finely chopped

Black pepper

Instructions

  1. Place tofu on paper towel–lined plate. Set another plate on top to weigh it down. Let stand 10 minutes to remove excess liquid. Drain off liquid and discard.
  2. Combine tofu, buttermilk, mayonnaise, chives, dill, parsley, vinegar, garlic, pepper, and salt in food processor; process until smooth. (Can be refrigerated in airtight container up to 3 days.)
  3. Per serving: generous 1/4 cup
