This lightning-quick dish for one can easily be scaled up for a group of any size. And it also makes a great appetizer with tortilla chips or crackers.

Ingredients

Cooked shrimp

½ cup(s), chopped

Fresh tomato(es)

½ small, finely chopped

Cucumber(s)

½ small, Kirby, finely chopped

Uncooked red onion(s)

2 Tbsp, chopped

Fresh lime juice

2 Tbsp

Cilantro

2 tsp, fresh, chopped

Table salt

1 pinch(es), or to taste

Black pepper

1 pinch(es), or to taste

Instructions

  1. In a medium bowl, combine the shrimp, tomato, cucumber, onions, and lime juice; let stand for 10 minutes for the flavors to blend. Sprinkle with the cilantro; season with salt and black pepper.
  2. Serving size: 1 bowl
