This recipe is straightforward to make, flavorful and comforting. We use a technique called tempering to make the sauce rich and creamy. Tempering is simple if you follow one step; use very low heat and stir constantly until the sauce thickens. The eggs make the sauce rich and creamy; so tempering them into the hot broth by adding some hot into them while stirring then combining the two is your ticket to a luscious sauce. The zing of mint is a cooling and herbaceous treat. You can sub in your favorite fresh herb such as rosemary or thyme for new flavor variations. Ready in just 40 minutes, this rich pasta dish needs only a crisp green salad to complete the meal.

Ingredients

Uncooked pasta

6 oz, pappardelle

Egg

2 large egg(s)

Grated Parmesan cheese

Cornstarch

Black pepper

Olive oil

1 Tbsp

Garlic

1 clove(s), finely chopped

Uncooked shrimp

1¼ pound(s), peeled and deveined

White wine

¼ cup(s)

Chicken broth

¾ cup(s)

Fresh mint leaves

3 Tbsp, chopped

Lemon zest

1 tsp, finely grated

Instructions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, whisk together eggs, 1 tablespoon Parmesan, cornstarch, pepper, and 1/8 teaspoon salt in small bowl.
  3. Heat oil in large skillet over medium-high heat. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add shrimp and remaining 1/8 teaspoon salt and cook, stirring frequently, just until pink, about 2 minutes. Add wine and bring to boil; stir in broth and bring to simmer. Slowly whisk 1/2 cup of hot broth mixture into egg mixture. Remove skillet from heat and slowly add egg-broth mixture to skillet, stirring constantly. Return skillet to low heat and cook, stirring constantly, until sauce is thickened, about 1 minute.
  4. Stir in hot pasta. Remove from heat and continue stirring until pasta is coated. Stir in mint and zest. Divide pasta mixture among 4 bowls; sprinkle evenly with remaining 1 tablespoon Parmesan.
  5. Serving size: about 1 1/4 cups pasta and 3/4 teaspoon Parmesan
