Ready in just over 10 minutes, you can play with a sprinkle of herbs adding no time but bigger flavor. Serve with whole-wheat toast and fresh fruit, or reheat leftover vegetables from a previous meal for an easy full plate.

Preheat the oven to 350°F.

Spray 2 (1⁄2-cup) ramekins with canola nonstick spray and place a tomato slice in the bottom of each ramekin. Sprinkle with 1⁄8 teaspoon salt and 1⁄8 teaspoon pepper. Carefully crack an egg into each ramekin and sprinkle with the remaining 1⁄8 teaspoon salt and 1⁄8 teaspoon pepper. Bake until the eggs are just set, about 10 minutes. Yields half of the eggs per serving.
