This one pan dinner comes together fast and is full of good for you ingredients that pack a serious nutrient punch. Watch the fish in the broiler carefully so it doesn't burn.

Ingredients

Uncooked salmon

1 pound(s), skinless, center-cut, one whole piece

Kosher salt

4 pinch(es), divided

Black pepper

4 pinch(es), divided

Broccoli

1 head(s), cut into florets

Uncooked sweet potato

1 medium, cut into fries

Garlic clove

4 clove(s)

Extra virgin olive oil

2 tsp

Whole-grain mustard

3 Tbsp

Honey

2 Tbsp

Instructions

  1. Preheat the oven to 425°F. Line a sheet pan with parchment paper.
  2. Place the salmon in the center of the prepared sheet pan. Season generously with salt and pepper. In a large bowl, combine the broccoli, sweet potato fries, and whole garlic cloves with the oil. Season generously with salt and pepper. Scatter the veggies around the salmon. In a small dish, whisk the mustard and honey. Pour the glaze over the salmon. (Some will run off, that is ok.)
  3. Bake for 30 minutes. Increase the heat to broil and cook for 3 more minutes, keeping an eye on the salmon so it doesn’t burn.
  4. Remove the salmon to a serving platter. Use a large spoon to stir the broccoli and sweet potatoes with the remaining glaze on the sheet pan. Serve.
  5. Serving size: about 3 oz salmon and 1/4 of the vegetables
